These Burritos will blow their minds! 100% natural smoked pulled pork with on-the-spot guacamole and the freshest salsa around: capsicum, tomato, onion and coriander (swap-out the coriander with parsley if that’s not your thang).
Fast and delicious, these will definitely hit the spot!

1 x 560g Darling Fresh Smoke Haus Smoked Pulled Pork
OR
2 x 280g Darling Fresh Smoke Haus Pulled Pork Duo pack
10 large flour tortillas
1 cup rice
1/4 bunch coriander (or parsley), medium chop
1/2 red onion, fine chop
2 ripe tomatoes, medium chop
1/2 yellow capsicum (can use red or green), medium chop
1 lime, juiced
1 ripe avocado, smashed
Salt & pepper to taste
1 x 400g tin of black beans, drained
100g grated cheese
Get the rice on
Cook the Rice according to packet instructions.
Prep the Guacamole and Salsa Ingredients
Prepare a plate for the Guac ingredients, and a bowl for the Salsa Ingredients.
Chop the coriander into max 5mm pieces and split evenly between the two.
Fine chop the red onion and split evenly between the two.
Chop the tomatoes into 5mm pieces and put 1/4 in the Guac, and 3/4 in the Salsa.
Slice the capsicum into 1cm pieces, adding to the Salsa bowl.
Halve the avocado, removing the stone. Use a butter knife to pre-slice the avocado while still in its shell. Scoop out into a new bowl with a spoon, and smash with a fork.
Roll the lime to improve juice yield, cut in half and squeeze the juice from each into the avocado and the salsa.
Prepare the Guacamole
Add the Guac plate with coriander, red onion and tomatoes to the avocado and lime juice, mix through.
Add pinches of salt and pepper to taste and mix well, set aside.
Prepare the Salsa
Add pinches of salt and pepper to the salsa bowl and mix through and set aside for serving.
Prepare the Pulled Pork
Heat the DF Smoke Haus pork as per pack instructions, placing into a bowl ready for serving, too easy!!
Prepare the Beans and Cheese
Drain the tin of black beans and rinse with fresh water. Place in a microwave-safe bowl and heat for 2 minutes or until steaming hot.
Place the grated cheese in a bowl ready for serving
Assemble your Burritos!
Prepare your Burritos using as much of each ingredient as you want.
