Classic lamb with boosted flavour, this is a quick, fresh and bright easy-win meal.
Try any of our seasonings for some variety.
INGREDIENTS - SERVES 4
6-8 lamb mid-loin chops
Olive oil drizzle, both sides
~1-2 tsp of Darling Fresh Smoke Haus #4 All-Purpose wood-smoked seasoning (to taste)
350g (1.5cups) rice
Greek Salad
1 continental cucumber, cut into 1cm quarter rounds
1/2 green capsicum, cut into ~2cm squares
2 med-large tomatoes, cut into ~2-3cm chunks
200g Greek feta cheese, cut into 1-2cm cubes
1/2 red onion, large chop
1/2 cup kalamata olives
Greek Salad dressing - mix in a bowl
1/4 cup olive oil
5tsp red wine vinegar
1 med-large clove garlic, crushed
1 1/2 tsp Dijon mustard
Salt and Black Pepper to taste
METHOD
Preheat a pan or BBQ to medium heat.
Prepare rice as per instructions.
Drizzle and rub olive oil into the chops, both sides.
Season lamb and rub in well.
Cook lamb in pan with oil, or on the BBQ.
Prepare the Greek Salad ingredients and dressing, mix together in a serving bowl.
When the lamb is done, rest under foil for 5 minutes, serve and enjoy!
