Our go-to when the cold weather hits, there's nothing better than a tasty baked spud in less than 30min, even better when it wont break the bank!
We've used our Darling Downs Dust smoked seasoning to coat the potato with amazing flavour as well as make the easy-peasy Cowboy Butter... everyone will be happy with this delicious winter warmer.
INGREDIENTS - SERVES 4
4 large brushed potatoes, washed
1 Duo pack of 280g Darling Fresh Smoke Haus Pulled Lamb
~ 3tbsp olive oil to coat potatoes
2 teaspoons of DF Smoke Haus wood-smoked seasoning, we used Darling Downs Dust for this one, but you can also just use Salt & Pepper to taste, or any other spice blend.
3 knobs butter, or level up with our easy Cowboy Butter (recipe here) - Mix 1 tsp Darling Downs Dust with 3 tbsp of room temperature butter.
100g shredded cheese, we used mozarella
250g sour cream
1 spring onion, diagonally sliced
Side salad, this one is lettuce, tomatoes and yellow capsicum.

Preheat the oven to 180degC.
Wash the potatoes and poke 12 times each with a fork
Place potatoes in a bowl, add olive oil and seasoning and mix to coat potatoes well.
Place seasoned potatoes on a plate and microwave on 'jacket potato setting', as a guide 1kg potatoes needs ~18minutes on high. Smaller potatoes may need less.
Slice the spring onion.
When completed, move the potatoes onto a baking tray lined with baking paper, bake at 180degC for 10minutes.
Follow the pack instructions to heat the Pulled Lamb in a bowl and get the topping ingredients ready.
Quarter the potatoes from the top, add in order:
- Cowboy Butter (or just plain butter will also do)
- Grated cheese
- Pulled Lamb
- Sour cream
- Sprinkle of spring onions
Add a quick side salad to serve, and Enjoy!!
