Spice it up with our amazing wood-smoked Jamaican Jerk Seasoning!
Used 2 ways in this recipe, on the wings and on the delicious grilled pineapple. Mrs Smoke Haus has also used one of our seasonings in he recipe for the freshest rice salad around!
INGREDIENTS - SERVES 4
Jerk Wings
8-10 Chicken wings, de-tipped and cut into winglets through the joint.
~ 2tbsp olive oil to coat winglets
3tsp wood-smoked Jamaican Jerk Seasoning
Mrs Smoke Haus' Fresh Rice Salad
1 1/2 cups of rice
1 continental cucumber
1/3 red capsicum
1/3 Yellow capsicum
1/2 punnet cherry tomatoes, cut in half
1/2 red Onion, 1cm dice
4 sticks celery, sliced 5-10mm thick
1/2 Avocado, cut into chunks
For the Dressing:
1/2 cup olive oil
Juice of 1 1/2 lemons
2tsp mustard
1 1/2 tsp wood-smoked Savoury Garlic & Pepper seasoning (but you can use salt and pepper too)
For the Grilled Pineapple:
4 Pineapple slices (fresh or tinned), as much as you want to eat
2tbsp olive oil
1/1/2 tsp wood-smoked Jamaican Jerk Seasoning
Cook the rice as per instructions, then layer 1" thick in a tray in the fridge to cool down for the salad.
Preheat the oven to 200degC.
De tip the wings, then on a chopping board, carefully cut between the wing joint with a sharp knife to create the winglets.
In a bowl, drizzle the olive oil on the wings and mix through. Then sprinkle the seasoning on and mix again, then place the wings skin-side up in a baking tray.
Cook in the oven for 40min or until cooked through and golden brown.
Prepare the Grilled Pineapple as per this recipe, and grill on the BBQ or fry in a pan on the stove.
Wash and chop the vegetables for the Salad, mix the salad dressing ingredients together, and combine with the cooled rice in a large bow. Mix well.
Serve it up as soon as the wings are done, and enjoy!!
