SERVES 8 - PREP TIME 20min - COOK TIME 90min (smoker, or oven), can BBQ

INGREDIENTS
- 1 1/2 tbsp Darling Fresh Smoke Haus Darling downs DARK rub
- 6 jalapeno chillies - halved with seeds removed (use a teaspoon)
- 250g Cream cheese (1 pack), microwave for 15-45 sec to get soft
- 2 tbsp Chives, finely chopped
- 12 large slices prosciutto
- Toothpicks
PROCESS
- Mix your softened cream cheese, chives and Dark rub in a bowl
- Cut jalapenos in half lengthwise, and remove white pith and seeds with a teaspoon
- Fill jalapeno shells with your mix, a small spoon works well
- Wrap each one in prosciutto, using toothpicks as needed to secure loose flaps
- Place on a wire rack ready for transfer into your smoker or oven
- Smoke over a light fruit-wood at 130degC for ~90min or until done, >60degC probe temp.
