Bright, colourful, super-tasty!! These are fun to make, easy to cook, and delicious to boot, mix up your ingredients to what you like, season well and enjoy!
Here we have three types with three of our wood-smoked rubs, but the beauty of skewers is you can be flexible, use whatever you like, be creative!

INGREDIENTS - SERVES 4

OPTION 1 - Pork Skewers with Sweet Onion Pepper Rub
- 6-7 thick pork rashers (~600g), rind removed, cut into 1-inch squares
- ~10 wooden skewers, soak in water if you are cooking over high direct heat
- ~1 big capsicum or 3x smaller ones, we used Orange for this cook, cut into 1" squares
- ~10 small-medium mushrooms, ~1" diameter, washed
- 1 red Onion, cut into 1/8's, only use 2 layers of the onion quarters, any more won't cook through
- ~5 rashers streaky bacon, cut to get 2 rollable pieces per strip
- 10 dried prunes, destoned
- 1 zucchini, cut into 1-inch rounds, then slice each round vertically into ~3 slices
- Olive oil spray

OPTION 2 - Beef Skewers with Darling Downs Dust Rub
- ~600g rump steak (or similar), thick if possible. Cut into 1-inch squares
- ~10 wooden skewers, soak in water if you are cooking over high direct heat
- ~1 big capsicum or 3x smaller ones, we used Red for this cook, cut into 1" squares
- ~10 small-medium mushrooms, ~1" diameter, washed
- 1 red Onion, cut into 1/8's, only use 2 layers of the onion quarters, any more won't cook through
- ~5 rashers streaky bacon, cut to get 2 rollable pieces per strip
- 10 dried prunes, destoned
- 1 zucchini, cut into 1-inch rounds, then slice each round vertically into ~3 slices

OPTION 3 - Chicken Skewers with JS#4 All-Rounder Rub
- ~600g Chicken Thigh Fillets, rind removed, cut into ~1-inch squares
- ~10 wooden skewers, soak in water if you are cooking over high direct heat
- ~1 big capsicum or 3x smaller ones, we used orange for this cook, cut into 1" squares
- ~10 small-medium mushrooms, ~1" diameter, washed
- 1 red Onion, cut into 1/8's, only use 2 layers of the onion quarters, any more won't cook through
- ~5 rashers streaky bacon, cut to get 2 rollable pieces per strip
- 10 dried prunes, destoned
- 1 zucchini, cut into 1-inch rounds, then slice each round vertically into ~3 slices
- Olive oil spray
- DF Smoke Haus wood-smoked JS#4 All-Rounder Rub

This one's pretty simple, just be careful not to stab yourself with the sewers!
In any order you like, slide the ingredients onto the skewer, don't jam the items together too hard, the meats need to cook effectively.
Lightly spray the completed skewers with olive oil, then evenly season. Turn the skewers over and repeat.
Cook over a medium heat grill, turning 3-4 times to avoid burning.
Serve immediately and enjoy!
