When its Taco Time, we're all there with you! This take on a classic Bahn Mi is super-fast and really yum!
And if you don't do Coriander like Mrs Smoke Haus does Coriander, swap it out with fresh spinach leaves :))
Ingredients
- Smoke Haus Pulled Pork, use a Duo for 2-3 people, or a Family pack for 4-5
- White corn small street tacos, ~3 per person, more for big eaters
- 1 punnet mini cucumbers
- Fresh coriander, as much as you can handle, or swap with spinach leaves
- 1 carrot cut into matchsticks
- 1/4 cup vinegar
- 1 cup water
- 1 tbsp sugar
- Mayonnaise
- 2 fresh red birds-eye chillis
Method
- Prepare your Smoke Haus pack as per instructions
- Wash and rough cut your coriander
- Cut Carrots into matchsticks
- Mix vinegar water and sugar
- Add carrot matchsticks and set aside
- Cut Mini cucumbers into quarters lengthways
- Load your tacos in the same order
- Add some mayo and you're good to go!
