They won't believe the flavour! Inspired from the famous Cuban sandwich, these ingredients are all best mates, try them out on yours.
SERVES 8 - PREP TIME 20min - COOK TIME 90min (smoker or oven)
INGREDIENTS
- Darling Fresh Smoke Haus BBQ Sauce
- Darling Fresh Smoke Haus JS#4 All-Rounder rub
- 6 large slices of round ham
- American style yellow mustard
- 6 cheeses square slices
- Pickles, sliced thin
- 12 slices thin-cut streaky bacon
- Toothpicks
PREPARATION - Scroll down for photos
1) On a large chopping board, lay out 2 slices of streaky bacon on a diagonal ready for rolling, and some loose toothpicks, this will get messy!
2) Squeeze a thin layer of mustard onto a slice of ham and place a slice of cheese on
3) Line a row of pickles down the middle
4) Roll the ham, keeping it as tight as you can. If there is too much mustard it will squeeze out
5) Place the roll on the end of one of the slices of bacon at a diagonal, and roll it along the bench, up the bacon, pining with toothpicks as you go. When the first one runs out, continue on the 2nd slice of bacon. Pin the front and end with a toothpick and remove any unnessesary toothpicks
6) Place on a grid tray, complete all cigars before saucing and seasoning
7) Brush BBQ Sauce over the top and all sides of the cigars
8) Dust the top and and as much of the sides as you can with JS#4 rub
9) Place the grid-tray in the smoker/oven, and smoke over a light fruit-wood, or oven-roast at 130cegC for ~1.5hrs or until probe temp >60degC
10) Glaze by brushing of BBQ sauce, remove toothpicks and serve, cutting in half or quarters for bite-sized deliciousness!
