The combo of our Franken-Sauce, Sweet Onion Pepper rub and soy sauce delivers. Give it a go!

SERVES 8 - PREP TIME 30min - COOK TIME 90min 

Note: for best results marinate the salmon overnight

INGREDIENTS

 - 1/2 cup Daring Fresh Smoke Hause Franken Sauce

 - 3tbsp Darling Fresh Smoke Haus Sweet Onion Pepper rub

 - 2tbsp soy sauce, salt-reduced

 - ~700g Thick skin-off salmon fillets, cut into 3cm cubes

PREPARATION - Scroll down for photos

1) The day before, cut the salmon into ~3cm cubes

2) Prepare the glaze by mixing the Franken Sauce, Sweet Onion Pepper rub and soy sauce in a dish

3) Mix half the glaze into the salmon pieces in a bowl, cover and marinate overnight in the fridge. Keep the remaining glaze in the fridge also.

4) On cook day, evenly place the salmon pieces on a grid tray, ensuring there are even air gaps in between pieces.

5) Glaze the tops and sides by brushing on half of the remaining glaze

7) Place the grid-tray in the smoker/oven, and smoke over a light fruit-wood, or oven-roast for ~1.5hrs at 130degC or until probe temp is >60degC

8) Glaze by brushing the remaining glaze onto the top and sides, ready to serve

9) Because they are soft and delicate, serve by placing the grid tray onto a wooden board, letting guests take their pieces with a tong from the grid tray, and wait for your 5-star reviews to start rolling in!
