SERVES 8 - PREP TIME 20min - COOK TIME 90min
INGREDIENTS
- 1tbsp Darling Fresh Smoke Haus Darling Downs Dust rub
- 8x medium/large mushrooms, washed
- 250g cream cheeses, softened by 30-45sec in the microwave
- 3/4 cup grated mozzarella cheese
- 1/4 red onion, finely diced
- 2tbsp chives, finely chopped
PREPARATION - Scroll down for photos
1) Remove the mushrooms stalks with a tablespoon
2) Mix all ingredients in a bowl, and fill the mushrooms generously, almost to the sides
3) Place in the smoker/oven, and smoke or oven-roast for ~1.5hrs at 130degC
4) Serve warm in a dish, slicing in half if they are large and you would like smaller portions
