Pork Belly Bites Easy Fried Rice with Sriracha Mayo Fried Egg Topper

Super-quick 15 minute Fried Rice with beans, peas, corn, carrots and spring onions, with a sriracha mayo fried egg topper!

SERVES 4 - Simply halve the quantities to serve 2       

TIME 15min

INGREDIENTS

2 x 280g Darling Fresh Smoke Haus Pork Belly Bites

350g or 1.5 cups long grain rice 

3 eggs for scrambling

3 spring onions, sliced diagonally, keep some for topping

2 medium carrots, diced 

75g beans (small handful), sliced

1/2 cup frozen peas and corn

4 eggs fried for the topper

Sriracha mayo drizzle (optional)

METHOD

Get the Rice on

Cook rice to your preferred method, typically 12-15min 

Initial Fry-up

Heat the Pork Belly Bites as per pack instructions, 5 mins in microwave.

In a large pan on med-high heat, fry the 3 eggs while prepping the spring onions, carrots, beans and frozen veggies.

When eggs are almost done, add all vegies and scramble. Cook on med heat for 3-5 minutes stirring occasionally.

In a second pan on high heat, fry the eggs for the toppers.

Put it all together

Add the heated Pork Belly Bites and tasty juices, stirring through. Remove from heat.

Stir in the hot drained rice 

Plate Up!

Serve in bowls with Egg topper, Sriracha Mayo drizzle (optional), and a scattering of sliced spring onions
