Pork Belly Burgers with Apple Slaw
Mouth-watering burgers in 15minutes, with Pork Belly, mayo, fresh apple slaw and Sriracha Mayo topping

SERVES 4 - Simply halve the recipe quantities to serve 2
INGREDIENTS
2 x 280g Darling Fresh Smoke Haus Pork Belly Bites
6 large rolls of your choice
2 knobs butter
1 green apple, grated
1/2 large carrot, grated
1/4 red cabbage, sliced
1/4 bunch flat-leaf parsley, chopped
1/4 bunch coriander, chopped
3 sprigs mint, chopped
4tsp mayonnaise (for coleslaw)
Mayonnaise drizzle (for burger)
Sriracha mayo drizzle
Optional side: put on a tray of oven chippies!
METHOD
Toast the Rolls
In a large frypan on low-medium heat, melt a knob of butter and toast the rolls. Do 2 batches of 3 rolls at a time.
Apple Slaw
Grate the green apple and carrot, and finely slice the red cabbage.
Medium chop the three herbs, then mix well with the mayonnaise. Add more mayo to taste.
Heat the Pork Belly Bites
Poke 2 holes in the pouch, laying it flat on a plate with the flap out.
Microwave for 5 minutes as per instructions, cutting open the bag with kitchen scissors and emptying into a medium bowl.
Put it all Together
From the base up, layer on mayo drizzle, Pork Belly Bites, a generous serve of apple slaw, and topped with Siracha Mayo, enjoy!
