Fast Pulled Mushroom Bite Bao Buns
Everyone loves Bao buns, how about the tastiest plant-based bao ever?!!
Fast and deliciously packed with 100% natural smoked pulled mushroom bites, spring onions, picked carrot, cucumber, chilli, sesame seeds, cashews, and if you’re into it: coriander?
Everyone makes their own, just how they like it!

SERVES 2 - Simply double the recipe quantities to serve 4
1 x bao bun 8-Packs (16 total)
1 small carrots, sliced into 2-3mm matchsticks
25ml rice wine vinegar
1/2 spring onion, finely sliced
1/2 Lebanese cucumber, sliced into 3-4mm batons
1/2 medium to large chilli, finely sliced with seeds removed
1/8 bunch coriander, medium chop
1/8 cup of 20g roasted cashews, crushed
1/2 tbsp sesame seeds
Prepare the Bao buns as per pack directions
Use a steamer to heat the buns
Prepare the ingredients
Slice the carrots into into 2-3mm matchsticks. To pickle them, mix through the rice wine vinegar in a small bowl. Toss 2 or 3 times during preparation to ensure that fantastic flavour comes through.
Slice the spring onion and chilli, removing the chilli seeds.
Prepare the cucumber batons, slicing to a 3-4mm width.
Heat the Pulled Mushroom Bites as per pack instructions.
Chop the coriander to a medium size.
To crush the cashews, place them on half of a paper towel or clean hand-towel. Fold the other half over the top, and crush with a mallet or rolling pin.
Place the Bao buns on plates, and let everyone pile in to create their own unique combinations, enjoy!
