Speedy Pulled Chicken Fried Rice

1 3/4 to 2cups long-grain white rice
2 tsp olive oil
4 free-range eggs
1 spring onion, sliced
1/2 large carrot, diced
1 cup frozen peas and corn
1/2 red capsicum, sliced
Fried shallots (on top, to taste)
Sriracha drizzle (on top, to taste)
Get the Rice on
Cook rice to your preferred method, typically 15-20min
Start the Eggs and heat the Chicken
In a large deep frying pan or wok on medium heat, heat the olive oil and commence frying the eggs
Heat the smoked pulled chicken as per pack instructions
Add the Ingredients
Finely slice the spring onion and place in the pan with the eggs.
When the eggs are half done, scramble in the pan with the spring onions, adding the carrot, peas, corn and capsicum to mix through, cooking for 3-5minutes.
Add the heated pulled chicken and stir through.
Add the cooked rice and stir through well, remove from heat.
Place into bowls and serve immediately, adding fried shallots and sriracha toppers to taste
